OK - I've got it working.
initially I'd tried other settings to get the series field to work - Under Device -> Configure this Device, I had the Save template set to include a custom field. Reverting this to the default of {author_sort}/{title} - {authors} and rechecking "read metadata from files on the device" followed by a factory reset of the kindle and now everything seems to work fine.
