I've found the Christian Classics Ethereal Library full of excellent material:

Some is txt, some rtf so they are ready to read - but its also very easy to just run them through
Book Designer or any other of the fine sony reader format converters available through this forum.
The Christian Classics Ethereal Library was started at Wheaton College and has now moved to Calvin College. Very good stuff.
