I'm not sure why you want a single book record. I copy the first book and all its formats/metadata (make a blank book and use the merge-keep others option), then replace the pdf in the new book record and mark that book with a tag or title change. Once again, you have a workable solution.

I have found a few reasons to have "versions" of the same document.

"Stripped" of images that don't scale well.
Other, less than optimal tweaks just for the tiny, small screens

Having to remember to press "Keep"
