Update your nook to a newer firmware version by sideloading (USB).
This is a known bug in stock firmware (not related to softrooting). Once you edited the WiFi hotspots while running a firmware above 1.0, the configuration file is assigned to another owner/group and no longer writeable with 1.0 firmware.
