8GB is fairly ginormous app space by Android standards. Yes, you could find a few large games to fill it, but you could also have something like 1000 average-sized apps on there. Granted, I'm not sure if the entire 8GB is available for apps on the N7.
As for SD cards, moving apps to SD has been a standard feature since Android 2.3. You can do it via Settings>Applications>Manage Applications or use the application manager in a third party app like Elixir. On a device with as much storage as the N7 I would
only do it for those mammoth games. If an app includes widgets, the widgets will not work if the app files are on the SD.
