If you go to
User Control Panel
Edit Options (on left hand side)
scroll down the page to Miscellaneous Options
scroll to Forum Exclusion
and you can choose forums to exclude from your New Post searches and from Last Forum Activity on the frontpage, holding down ctrl to select multiple forums and/or subforums.
