Assuming it's the same as the PRS-600, there's also a menu item for it. Press the "Options" button, switch on the "Notes" toolbar, and there's a bookmark button on the toolbar.
The single tap is used for the much more common operation of turning the page.
Really, though, people should read the user guide to find out the capabilities of a device. I'm sure that you would do so.
