Best Way (besides the obvious: one that works ) ?

I use Sigil to edit existing epubs. That includes adding/shufflin' images.

All you need (besides Sigil) is the Image in a JPG/JPEG, PNG (or GIF?) format.
Locate where you want it in the Book view and use the Add image ('screen') tool.

Fine tuning will require a switch to Codeview ((and some basic code skills )
