OK, if you poke the top of the screen, while in a book, you should see both top and bottom menus appear. On the bottom, there is a
B that is the second tab from the right. Selecting that will give you the "Font Weight" and "Contrast" settings. If you long press the "bold" selection of "Font Weight", You should be offered the option of setting that as default.
