I think it is more common to find good non-illustrated versions of a work than illustrated ones. If there's an illustrated one, there's probably a text-only version beside it, for those who prioritize a book that takes a minimum amount of storage.

I would encourage you to make the best book you can without limiting yourself to the typical e-ink reader display (or emulation software), and publish that. Making nice images is too hard and too time consuming to do otherwise.

Then, if you want to make a version with smaller file size or resolution images for whatever reason, use an automated tool, and move on.
