Rooting doesn't change the GUI or the main functionality of the stock OS. All it does is give the user (and some third-party apps) increased access to system files that they ordinarily wouldn't have.
I have kept the stock B&N firmware on my HD, but I have rooted it. I have also flashed a mod which allows sideloading.
There is a big misconception about what "rooting" really is, and many people incorrectly use the term when they are really talking about installing a new ROM.
