It depends on the TOC.xhtml file

I have discovered through trial and error, that iBooks takes all the items listed in the TOC.xhtml file to be chapters. So the way to make iBooks accurately state the number of pages left in the chapter, is to only include chapter headings in the TOC.xhtml, and to leave out headings of smaller sections.

It seems the tagging you use, whether a class of p tag, or an h1-6 tag doesn't affect it.
