^A properly sharp knife will solve the cutting problem as it's the the pressure one uses with duller knife that forces out the tear-inducing baddies. At least that's what I read somewhere and I do notice a difference between knives at home.

As far as grating is concerned. I'm not sure what the solution is. I'm thinking it's the same way that chefs can grab hot things and not wince. They've just developed huge eye callouses over the years.
