Does anyone know whether someone has been successful in creating an ebook with vector art (a la what can be created with Illustrator and saved/exported to PDF)?

If so, what authoring software is required and which ebook reader handles this capability.

Vector art is going to become an issue for publishing textbooks with graphics.

SVG support is a part of the ePub standard, so should ``just work''.

Draw the graphic in Illustrator, save as .svg (convert type to paths if targeting an epub viewer which doesn't do embedded fonts) and include as a graphic.
